Thailand

Thailand occupies a distinctive position in Southeast Asian coffee — a country whose output splits cleanly between large-volume commercial Robusta in the tropical south and a small, internationally celebrated specialty Arabica sector in the northern highlands, the latter grown by Akha, Lahu, Karen, and Hmong hill tribe communities on terrain that a generation ago produced opium. The royal development projects of King Bhumibol Adulyadej transformed that landscape, and the story of opium-to-coffee hill tribe cultivation is one of the most compelling origin narratives in the global specialty market.

Alongside that ethical dimension, Thailand has one of Southeast Asia's most developed domestic coffee cultures — from the ancient Hainanese kopitiam tradition of sweetened iced coffee in the south to a Bangkok and Chiang Mai third-wave scene that is among the most sophisticated in the region.

This MOC maps Thailand's coffee knowledge from the national overview through its five distinct growing regions, varieties, processes, and cultural context.
