Overview¶
Roast development theory refers to the principles governing what happens to coffee beans after first crack — the period when Maillard reactions and caramelisation continue, volatile aromatics evolve, and the bean's cellular structure expands. Development time ratio (DTR), defined as the time from first crack to the end of the roast divided by the total roast time, is a key metric used by specialty roasters to characterise and replicate roast profiles, with typical specialty DTRs falling between 20 and 25 per cent.
