Overview¶
The light roasting movement is a defining characteristic of third-wave specialty coffee, shifting away from the dark French roast style of the second wave toward lighter profiles that preserve a bean's origin-derived flavour compounds — fruit acids, floral aromatics, and delicate sweetness — rather than replacing them with roast-derived bitterness and smokiness. Rooted in the Nordic roasting philosophy, it represents a fundamental philosophical shift: treating the coffee bean as an agricultural product whose terroir is worth expressing, rather than a raw material to be transformed by heat.
