Overview¶
A sample roasting protocol is the standardised roasting procedure used to evaluate a green coffee's quality potential before purchasing or blending. The SCA specifies that sample roasts should reach an Agtron score of 58 ± 1 (whole bean) or 63 ± 1 (ground) and be rested 8–24 hours before cupping, ensuring that the roast profile does not mask or distort the coffee's inherent cup character and that results are comparable across different roasters and evaluators.
