Overview¶
Ethiopian green coffee is classified using a defect-based grading system that assigns grades from 1 (highest quality, fewest defects) to 5 (lowest). A separate classification — UGQ (Unwashed Good Quality) — applies to natural-process coffees, recognising that whole-cherry drying produces visible surface characteristics counted as "defects" in visual sorting, even when cup quality is high. The grading system is administered in the context of the Ethiopia Commodity Exchange (ECX), though direct trade arrangements have expanded since 2017 reforms.
Grade Definitions¶
Ethiopian washed coffee grading is based on defect count per 300 g sample:

UGQ (Unwashed Good Quality)¶
UGQ classifies natural-process (dry-process) coffees independently of the washed grading system. During natural drying, the dried cherry skin and fruit adhering to the bean creates visual characteristics that score as defects in standard physical sorting, even when the cup quality is high. An UGQ lot can score 80–88+ SCA points and command prices equivalent to Grade 1 or Grade 2 washed coffees.
The Ethiopia Commodity Exchange (ECX)¶
The ECX was established in 2008 as a centralised trading platform to improve market transparency and pricing efficiency. Under the original ECX system, coffee was graded and traded by region and grade only — no washing station or farm-level information was preserved. This structure limited traceability for specialty buyers.
In 2017, the ECX system was reformed to permit cooperatives achieving 80+ SCA cup scores and licensed private washing stations to sell directly outside the ECX. The 2017 reforms enabled a surge in traceable, washing-station-specific lots reaching the specialty market — the named washing stations (Koke, Aricha, Worka, Shakiso) now appearing on specialty roaster bags are a direct result of these reforms. Commercial-grade coffee continues to trade through the ECX.
Regional Overview¶
Ethiopia's principal specialty regions each have characteristic grading contexts:

Washing Stations and Cooperatives¶
Washing stations are the quality control point for washed lots. A single washing station receives cherry from dozens or hundreds of smallholder farmers, depulps, ferments, washes, and dries it on raised beds. The station's management practices determine the lot's defect count and cup quality. Notable washing stations with established specialty reputations include Koke, Aricha, Worka, and Biloya (Yirgacheffe), Shakiso and Hambela (Guji), and Duromina (Sidama).
Cooperatives aggregate smallholder members, provide shared processing infrastructure, and sell collectively — often directly to specialty buyers under the post-2017 ECX rules. The Yirgacheffe Coffee Farmers Cooperative Union (YCFCU) and the Sidama Coffee Farmers Cooperative Union are the most widely recognised.
Heirloom Varieties and Grade¶
Because the vast majority of Ethiopian coffee is grown from indigenous heirloom landraces rather than named commercial varieties, the variety designation on Ethiopian lots is typically "Heirloom" or "Ethiopian Heirloom" — a collective term reflecting genetic diversity rather than a single cultivar.
