Overview

The Nordic roasting profile describes the characteristically very light roast style developed by Scandinavian specialty roasters, targeting high Agtron scores (typically 75–90 for whole bean) to preserve origin-derived fruit, floral, and acidic notes rather than developing roast-derived caramel or bitter flavours. Associated with roasters such as Tim Wendelboe and Peter Dupont, this approach became the benchmark style for third-wave specialty roasting globally and is closely linked to Nordic countries' dominance in World Barista Championship competition during the 2000s and early 2010s.
