Indonesia MOC

Indonesia is the world's fourth-largest coffee producer and the origin of one of coffee's most distinctive and influential processing innovations — Giling Basah (wet-hulling), the method responsible for Indonesian Arabica's defining profile of heavy body, low acidity, and complex earth and herbs. The country's coffee spans an archipelago of over 17,000 islands, with Arabica produced in the highland zones of northern Sumatra (Aceh/Gayo, Lintong/Mandheling), Sulawesi (Toraja, Enrekang), Java, Flores, Bali, and Papua, while Robusta (approximately 90% of production) dominates the lowlands. Dutch colonial introduction in the 1690s made Java the world's first commercial coffee source outside Yemen; the word java as a synonym for coffee derives from this history.
