China MOC¶
China occupies a unique and rapidly evolving position in global coffee: simultaneously one of the world's most consequential producing origins and its fastest-growing consumer market. Commercial production is concentrated almost entirely in Yunnan Province in the country's subtropical southwest, where Arabica is cultivated across five distinct prefectures — Pu'er, Baoshan, Lincang, Dehong, and Xishuangbanna — each with its own altitude range, terroir character, and quality profile. A separate, historically and culturally significant tradition exists on Hainan Island in the south. The quality story in China has moved with extraordinary speed: from a Nestlé-driven commercial Catimor origin producing commodity blending material in the 1990s to a region producing Gesha lots scoring 87–90 SCA in Lincang within two decades. On the consumption side, China's café revolution — anchored by Starbucks, Luckin Coffee, and a world-class independent specialty scene in Shanghai — has created a domestic market of extraordinary scale and growth velocity.
