Overview

Yeast inoculation is a processing technique in which specific yeast strains — often wine or brewing yeasts — are added to the fermentation environment (either to the pulped coffee, the mucilage, or a surrounding liquid medium) to drive fermentation in a controlled, predictable direction. Inoculation can produce very specific aromatic outcomes such as tropical fruit, florals, or wine-like notes, and has become a significant tool in competition and premium micro-lot processing, though it raises ongoing debate about naturalness and authenticity in specialty coffee.
