Overview

Fermentation control refers to the deliberate management of the microbial fermentation stage in coffee processing — controlling duration, temperature, oxygen exposure, pH, and inoculation with specific yeast or bacterial strains — to achieve consistent and intentional flavour outcomes. It distinguishes precision specialty processing from traditional fermentation, where conditions were largely unmanaged, and has become a defining feature of competition-level and ultra-premium micro-lot coffee production.
