Overview

Processing innovation in specialty coffee refers to the development and adoption of novel post-harvest techniques — including anaerobic fermentation, carbonic maceration, yeast inoculation, honey processing variations, and co-fermentation with fruit or other substrates — that create distinctive flavour profiles beyond those achievable through traditional washed, natural, or honey processing. These techniques have become increasingly central to competition coffee and premium micro-lot positioning from the 2010s onward.
