Overview¶
Atitlán is one of Guatemala's most visually dramatic coffee-growing regions, with plantations on the slopes above Lake Atitlán — a volcanic crater lake in Sololá Department often described as one of the most beautiful lakes in the world — at altitudes of 1,500–1,700 metres. Three volcanoes surround the lake — Volcán Atitlán, Volcán Tolimán, and Volcán San Pedro — and their volcanic soils, combined with the lake's moderating influence on temperature and humidity, create a distinct microclimate that produces Atitlán's characteristic lively acidity, citrus brightness, and medium body. Atitlán is one of Guatemala's more active Cup of Excellence producing regions and has a strong cooperative sector serving the predominantly Kaqchikel and Tz'utujil Maya communities on the lake shores.
Geography and Terrain¶
Lake Atitlán (1,562 m above sea level) is a volcanic caldera lake approximately 18 km wide and 340 metres deep — the deepest lake in Central America. It is rimmed by three young composite volcanoes (Atitlán 3,537 m, Tolimán 3,158 m, San Pedro 3,020 m) and surrounded by steep, forested slopes that drop dramatically to the water. The coffee-growing zone occupies these slopes at 1,500–1,700 metres.
The lake creates a distinctive microclimate: it moderates daytime temperatures, increases local humidity, and influences cloud formation. The volcanic soils — basaltic and andesitic, derived from the surrounding cone volcanoes — are rich in minerals and well-draining. The regional climate is influenced by both Pacific and interior highland weather systems.
Notable local phenomenon: the Xocomil wind — a local name for an afternoon wind that rises from the lake and can be intense. This wind contributes to the region's microclimate and drying conditions.
Farming Systems¶
Coffee is grown by Kaqchikel and Tz'utujil Maya communities in villages around the lake — San Lucas Tolimán, Santiago Atitlán, San Pedro La Laguna, and others. Farms are typically small (0.5–2 ha), on steep lake-edge slopes requiring selective hand-picking. Cooperative organisation is well-developed in the region:
San Lucas Mission Cooperative (San Lucas Tolimán) is one of the most internationally recognised Atitlán cooperatives, having developed a social-enterprise model linking fair trade coffee with community development programmes in education and healthcare.
Several estate farms also operate in the more accessible areas of the lake region.
Processing¶
Washed processing is standard. The lake's abundant clean water has historically supported wet milling. Cooperative wet mills serve smallholder cherry delivery from surrounding villages.
Varieties¶
Bourbon is the primary variety in quality-focused plots; Caturra and Catuai are widespread. Pache — the Guatemalan-native dwarf Typica mutation associated particularly with Atitlán and Fraijanes — is present in the region and associated with a clean, nuanced cup character.
Cup Profile¶
Atitlán washed: lively bright acidity (citrus — orange, grapefruit, lemon), medium body, chocolate, stone fruit, mineral undertone reflecting the volcanic lake terroir, clean sweetness. A well-defined, vibrant profile that sits between the richness of Antigua and the more extreme brightness of Huehuetenango. SCA 83–87 for quality lots; CoE finalists score 87–90.
