Overview¶
Villa Sarchi is a natural Coffea arabica compact mutation of Bourbon, discovered in the district of Sarchi (Valverde Vega canton, Alajuela province) in Costa Rica in the 1950s. Like Caturra (Brazil) and Pacas (El Salvador), Villa Sarchi displays the compact dwarfism phenotype — reduced internode length producing a smaller, denser plant than standard Bourbon — arising from what is believed to be the same or equivalent recessive genetic mutation. Villa Sarchi is adapted to the cool, high-altitude conditions of Costa Rica's highlands and produces a cup quality closely aligned with Bourbon, prized for bright acidity and sweetness. It is best known internationally as one of the parent varieties of Sarchimor (Villa Sarchi × Timor Hybrid).
Discovery and Naming¶
The Villa Sarchi mutation was identified among Bourbon plantings in the village of Sarchi, in the coffee-growing highlands of the Alajuela region, Costa Rica. Sarchi is known as a centre of traditional Costa Rican crafts (oxcart painting) and coffee cultivation; the variety takes its name directly from the locality of its discovery. The compact mutation was recognised for its higher planting density potential and was multiplied and distributed by Costa Rican coffee farmers and the Centro de Investigaciones en Café (CICAFE).
Characteristics¶

- Cherry colour: Red; standard Bourbon cherry form but smaller than Bourbon
Cup Quality¶
Villa Sarchi produces a cup quality closely related to Bourbon: - Acidity: Bright, complex, pleasant; vivid citric and malic character at high altitude - Body: Medium; clean, light-to-medium mouthfeel - Sweetness: Characteristic Bourbon sweetness; sugary - Flavour: Stone fruit, red berry, apple, mild floral notes; altitude-dependent complexity - Aftertaste: Clean, sweet
At the highest Costa Rican altitudes — above 1,500 m in Tarrazú, Naranjo, and West Valley — Villa Sarchi can express exceptional acidity and complexity comparable to other high-end Bourbon-lineage varieties. It has featured in Cup of Excellence lots from Costa Rica.
Relationship to Sarchimor¶
Villa Sarchi's most significant international impact is as the compact Arabica parent in the Sarchimor cross (Villa Sarchi × Timor Hybrid T5296), developed by CATIE in the 1980s. In Sarchimor, Villa Sarchi contributes the compact plant form and Bourbon-lineage cup quality genetics, while the Timor Hybrid contributes leaf rust resistance. Sarchimor derivatives (including Parainema in Honduras and Chandragiri in India) are now more widely distributed globally than Villa Sarchi itself.
Comparison with Caturra and Pacas¶
Villa Sarchi, Caturra, and Pacas are three parallel compact Bourbon mutations discovered in different countries (Costa Rica, Brazil, El Salvador respectively). All share: - Compact dwarfism from the same or equivalent single gene - Bourbon parentage and cup quality - Higher planting density potential than standard Bourbon - Susceptibility to coffee leaf rust
Regional differences in selection history and growing conditions produce minor variations between the three, but they are functionally very similar. Villa Sarchi is distinguished by its specific adaptation to cool, high-altitude Costa Rican conditions.
