Overview

Tasting coffee intentionally involves evaluating aroma (both dry fragrance of ground coffee and wet aroma after water contact), then assessing flavour, acidity, body, sweetness, aftertaste, balance, and cleanliness. The SCA cupping protocol provides a standardised framework for this evaluation, while casual tasting uses the same attributes in a less structured way to build sensory vocabulary and appreciation. Consistent intentional tasting practice, supported by reference to the SCA Flavour Wheel and the World Coffee Research Sensory Lexicon, is the most effective method for developing a reliable and communicable sensory vocabulary.
