Overview

Light roast philosophy is the approach — central to third-wave and Nordic specialty coffee — of roasting coffee to minimal development, targeting Agtron scores in the 70–95 range, in order to preserve the origin-derived acidity, floral aromatics, and varietal character that heavier roasting destroys. Proponents argue that high-quality green coffee contains inherent flavour potential that a skilled roast should reveal rather than transform, in contrast to the dark roast tradition where roasting creates new flavours through heavy caramelisation and pyrolysis. Tim Wendelboe, Coffee Collective, and Koppi are among the leading Nordic roasters whose work defined the ultra-light specialty roast standard.
