Overview¶
Fluid bed (or air) roasting uses a stream of hot air to suspend and agitate coffee beans during roasting, in contrast to drum roasters where beans tumble in a heated metal cylinder. Fluid bed roasters — such as the Loring Smart Roast and, in the home market, the Ikawa — tend to produce faster, cleaner roasts with fewer conduction-related defects, and are used by some specialty roasters seeking precise control over roast development. The convection-dominant heat transfer of fluid bed roasting differs fundamentally from the mixed conduction-convection profile of drum roasting, producing characteristically brighter, lighter-bodied cup profiles.
