Overview

Processing as differentiation describes the strategic use of post-harvest processing methods to create distinctive, market-differentiating flavour profiles that justify higher prices. As green coffee quality improved across origins, processing method became increasingly important as a differentiator, with fermentation-heavy naturals, anaerobic washed, and yeast-inoculated lots commanding significant premiums over conventionally processed coffees of equivalent variety and elevation.
