Overview¶
Coffee processing encompasses the methods used to transform freshly harvested coffee cherries into stable, exportable green beans. The three principal approaches — washed, natural, and honey — differ in how much fruit remains in contact with the seed during drying, governing fermentation activity and the flavour compounds transferred to the final cup.
