Definition¶
Terroir is the combination of environmental conditions—such as altitude, climate, soil, and geography—that influence how coffee grows and tastes in the cup [web:53][web:56]. It explains why the same variety can taste different when grown in Ethiopia versus Brazil [web:48][web:50].
