Overview¶
Tolima department in the upper Magdalena Valley of central Colombia is a significant specialty origin contributing approximately 12% of national production, growing washed Arabica at altitudes of 1,200–2,000 metres on the slopes of the Cordillera Central and Cordillera Oriental. Tolima holds a Denominación de Origen (DO), and the Best of Tolima competition (launched 2024) highlights the growing specialty recognition of the department's micro-lot sector. Its geography borders Huila to the south, and the southern Tolima municipalities share much of Huila's terroir character.
Geography and Terrain¶
Tolima occupies the central Magdalena Valley, bordered by Huila to the south, Cundinamarca and Boyacá to the east, and several departments to the west. The departmental capital is Ibagué. Coffee is grown across the mountainous areas of southern Tolima (San Agustín border zone), Planadas, Rioblanco, and other municipalities in the Cordillera Central foothills.
Altitude ranges from 1,200 to 2,000 metres. Soils are volcanic and sedimentary, varying by subregion.
Farming Systems¶
Smallholder farms of 1–3 hectares within the FNC cooperative system. Tolima has historically been underserved in specialty market development relative to its quality potential, but direct-trade investment and competitions like the Best of Tolima are closing this gap.
Processing¶
Fully washed processing standard. Extended fermentation practiced on specialty farms.
Varieties¶
Caturra and Castillo dominant. Bourbon on quality farms.
Cup Profile¶
Tolima washed Arabica: medium body, medium acidity, balanced, sweet, fruity (apple, peach), chocolate, caramel. Southern Tolima (near Huila border) can produce cups closely resembling Huila's best. SCA 83–87.
