Overview

Chinameca is El Salvador's east-central volcanic coffee zone, centred on the San Miguel volcanic complex in San Miguel and Usulután departments at altitudes of 1,000–1,800 metres. The zone is named for the town of Chinameca and its coffee-growing highlands, with the Volcán Chaparrastique (San Miguel volcano, 2,130 m — active) providing the volcanic soil foundation. The region produces a balanced, full-bodied profile that represents the mid-tier of Salvadoran specialty production.


Geography and Terrain

The Chinameca zone covers the highlands of San Miguel and western Usulután departments, on the slopes of Volcán Chaparrastique and the adjacent highland terrain. The active volcano creates a continuously renewed volcanic soil environment, and altitudes of 1,000–1,800 metres provide adequate conditions for specialty Arabica.

Volcán Chaparrastique has been active throughout recorded history, with eruptions and gas emissions periodically affecting farming operations on the slopes. Its continuing volcanic activity maintains the fertility of the growing soils.


Farming Systems

A mix of estate and smallholder farming. The region has better accessibility than the remote eastern Morazán zone and more investment in processing infrastructure.


Processing

Washed processing at estate and cooperative wet mills. Honey processing is practiced on some specialty farms.


Varieties

Bourbon, Pacas, and Catuai. The volcanic terroir of Chaparrastique produces a noticeably mineral quality in the best washed lots.


Cup Profile

Chinameca washed Bourbon (1,200–1,800 m): balanced, full body; dark chocolate, stone fruit, mild volcanic minerality, caramel, medium acidity. More body-forward than the western highland profiles; the volcanic influence contributes weight and mineral depth. SCA 82–86 for quality lots.
