Overview

Grind adjustment is the mechanical process of changing the grind setting on a coffee grinder to produce a coarser or finer grind. Understanding how adjustments work on different grinder types, how much to adjust, and how to evaluate the result are practical skills central to consistent espresso and filter coffee preparation.

How Grinders Work

All grinders reduce whole coffee beans to grounds by passing them between two abrasive surfaces called burrs. The distance between the burrs determines grind size:

  • Burrs closer together: Finer grind
  • Burrs further apart: Coarser grind

Adjustment changes this distance. The mechanism varies by grinder type.

Grinder Types and Adjustment Mechanisms

Stepped Grinders

Stepped grinders have discrete adjustment positions — clicks or numbered positions — that move the burrs by a fixed increment each step. Examples include many Mazzer models, Anfim, and entry-level Mahlkönig grinders.

  • Adjustment: Turn the adjustment collar one click at a time
  • Direction: Turning clockwise typically means finer; anticlockwise means coarser (varies by model)
  • Increment size: Varies; some grinders have large steps (significant extraction change per click), others have finer steps
  • Assessment: Pull a shot after each single-click adjustment

Stepless Grinders

Stepless grinders allow continuous adjustment with no clicks — the collar can be stopped anywhere. Examples include the Mahlkönig EK43, Anfim Super Caimano, and many competition-grade grinders.

  • Adjustment: Turn the collar by a small, consistent amount — typically 5–15° of rotation for a meaningful change
  • Direction: Check the grinder's markings; typically marked with "+" for coarser and "–" for finer
  • Precision: Greater — but also easier to overshoot
  • Assessment: Very small adjustments; evaluate carefully

Grinders with Digital or Numerical Settings

Some modern grinders (for example, the Mahlkönig E65S and Mazzer Kony E) have digital displays or numerical settings. These provide reference numbers for settings, making it easier to return to a known position.

The Grind Chamber and Purging

When the grind setting is changed, the coffee already inside the grinder's chute and chamber was ground at the previous setting. This coffee must be purged before pulling an evaluation shot — otherwise the shot represents a mixture of old and new settings.

Purge method: 1. Make the adjustment 2. Run the grinder for 3–5 seconds (or until the chute is clear) without dosing into a portafilter — grind into the knock box or a cloth 3. Dose normally for the evaluation shot

Failing to purge is one of the most common errors when dialling in and produces misleading results.

How Much to Adjust

A common error is adjusting too aggressively. The standard approach:

  • One click (stepped) or a very small rotation (stepless) at a time
  • Evaluate, then adjust again if needed
  • On most grinders, a single click changes extraction time by 2–5 seconds

When a larger adjustment is appropriate: - When starting from an entirely unknown setting (for example, a new grinder or after a major climate shift) - After a bag change to a very different coffee - When the current extraction is dramatically off (running in under 15 seconds or over 45 seconds)

In these cases, a larger initial adjustment is justified to get within range, followed by fine adjustments.

Direction Reference

Most grinders are marked, but adjustment directions vary between models. Confirming the direction on any new grinder by making a small adjustment and checking whether the next shot runs faster or slower is the safest approach.

A basic reference once direction is confirmed: - Shot too fast → finer → adjust in the "slow it down" direction - Shot too slow → coarser → adjust in the "speed it up" direction

Notes: Slightly fast on first pull; moved to 6.5
