Overview¶
Particle size distribution (PSD) describes the range and uniformity of particle sizes produced by a coffee grinder; a narrow, uniform PSD produces more even extraction — all particles extract at similar rates — while a wide PSD (with many fines and boulders) leads to simultaneous over- and under-extraction. PSD analysis using laser diffraction or sieve testing became a tool for evaluating grinder quality in specialty coffee from approximately 2013 onward, linked to the EK43 adoption movement. Understanding PSD is now foundational to grinder selection, recipe development, and the science of coffee extraction.
