Overview¶
Coffee extraction science is the body of physical and chemical knowledge that explains how soluble compounds transfer from roasted coffee grounds into water during brewing. It encompasses dissolution thermodynamics, diffusion kinetics, compound solubility hierarchies, and the role of brewing variables (grind size, temperature, contact time, water chemistry, agitation) in controlling extraction rate and completeness. Extraction science underpins all modern brewing optimisation and professional quality control in specialty coffee.

- Extraction science draws on thermodynamics (solubility and temperature relationships), mass transport (diffusion), and food chemistry (compound classes and their extraction behaviour)
