Overview

The Coffee Brewing Control Chart is a graphical tool developed by the Coffee Brewing Institute (later adopted by the SCA) that plots extraction yield (horizontal axis) against brew strength/TDS (vertical axis), defining an optimal brewing zone of 18–22% extraction yield and 1.15–1.35% TDS. It provides brewers with an objective framework for diagnosing and correcting under-extraction (sour) or over-extraction (bitter) by adjusting dose, grind, water temperature, or brew time. Originally developed by Ernest Lockhart in the 1950s, it remains the primary quantitative reference for filter coffee quality in the specialty industry.
