Overview¶
Specialty coffee and organic certification are independent quality and production systems — specialty measures cup quality (an SCA score of 80 or above with a clean green) while organic certification prohibits synthetic pesticides and fertilisers but makes no cup quality requirement. A coffee can be organic but not specialty, specialty but not organic, or both; many specialty roasters work with non-organic coffees because the best-quality micro-lots are often managed in ways that preclude certification even when agricultural practices are environmentally sound.
