Simple definition

Coffee roasting is the process of applying controlled heat to green coffee beans to transform them into roasted coffee with aroma, flavour, and colour.

Explanation

Green coffee beans are raw seeds with little smell or taste. When they are heated during roasting, physical and chemical changes occur inside the bean. Moisture evaporates, the beans expand and change colour, and reactions such as the Maillard Reaction and Caramelisation develop flavour and aroma compounds. The roaster controls time and temperature to influence whether the final coffee tastes lighter and brighter or darker and more robust.
