The Core Principle

Light roasts are denser and less soluble, requiring more heat and extraction time to unlock their flavours, while dark roasts extract faster and more aggressively. In the Clever Dripper, you compensate by adjusting grind size, temperature, steep time, and ratio rather than altering your entire process.12

Grind Size

For light roasts, a medium-fine grind — roughly the texture of smooth sand or a V60-style grind — is widely recommended to drive sufficient extraction from the denser beans. Five Senses Coffee, for example, specifies Baratza Encore settings 18–22 for their filter recipe. For dark roasts, grind coarser (closer to standard drip or slightly beyond) to slow extraction and avoid harsh, bitter over-extraction. A common recommendation is to start around Encore 28–33 for a dark roast.13456


Ratio

Both roast levels work well at 1:15–1:17, but dark roasts benefit from a slightly lower coffee dose or larger water volume (leaning toward 1:17–1:18) since they extract so readily — this avoids an overpowering, roast-heavy cup. Crema Coffee Roasters uses 1:16 (25 g / 400 g) as a general baseline. Five Senses uses 1:16.7 (24 g / 400 g) with a light filter roast.714


Water Temperature

Temperature is arguably the easiest adjustment to make between roast levels. Light roasts want 93–96 °C to help break down their tougher cell structure and extract floral and fruity notes fully. Dark roasts perform best at 83–90 °C — several experienced brewers in the community report 85–90 °C specifically for dark roasts to reduce harshness and avoid amplifying bitter roast character.148


Steep Time and Agitation

For light roasts, a longer steep of 3–4 minutes is common, with a gentle stir at ~1 minute to break the crust. James Hoffmann's popular Clever method (often applied to lighter coffees) uses water first, then coffee, a 2-minute steep, a crust break, then drain at 2:30. For dark roasts, shorten the steep to 2–3 minutes and avoid heavy agitation, which can rapidly over-extract the already-soluble beans. Scott Rao's guideline — pour boiling water first, whisk grounds in gently, swirl, cover, steep 2–3 min, then drain — works especially well for dark roasts as it minimises aggressive agitation.149


Drawdown as a Dial

The Clever's closed valve means drawdown time is independent of grind size during the steep, but it still acts as a useful diagnostic: if drawdown takes longer than 1:30–2 minutes, grind coarser; if it runs through in under 45 seconds, grind finer. This rule applies to both roast levels and is the fastest way to course-correct a recipe.10 111213141516
