Overview

The 1990s saw rapid growth in the specialty coffee market in the United States and Europe, driven by Starbucks' public offering (1992) and aggressive expansion, the founding of Counter Culture Coffee and Intelligentsia Coffee (both 1995), and the collapse of the International Coffee Agreement (1989) which flooded markets with cheap commodity coffee and paradoxically increased interest in quality-differentiated alternatives. This decade produced the infrastructure of the contemporary specialty industry — wholesale roasting models, barista culture, and a growing consumer awareness of coffee origin and quality. It also set the stage for the third wave's more radical focus on producer relationships and transparency.
