Overview¶

AST Sensory Analysis is the sensory skills pathway within the Authorised SCA Trainer (AST) certification programme. This qualification enables coffee professionals to officially teach SCA Sensory Skills courses at Foundation, Intermediate, and Professional levels, and to issue official SCA certifications to students.

Scope of the Qualification¶

Prerequisites¶

SCA Sensory Skills Professional certification
Extensive sensory experience (typically three to five years)
Teaching aptitude and industry involvement
Strong professional references

What ASTs Teach¶

Foundation Level: Introduction to sensory science, basic taste and olfaction, SCA Cupping Protocol basics, SCA Flavour Wheel usage.

Intermediate Level: Advanced cupping skills, Defect Recognition Training, sensory calibration, introduction to panel management.

Professional Level: Expert-level panel management, statistical analysis of sensory data, quality control system design, research methodology.
