Vacuum (Siphon) Brewing

Vacuum (Siphon) brewing is a theatrical and precise coffee extraction method that uses vapour pressure and vacuum suction to produce an exceptionally clean, aromatic, and full-bodied cup. Also known as a "vac pot," it functions like a science experiment, combining full immersion brewing with fine filtration to highlight a coffee’s delicate flavour notes. [1, 2, 3, 4, 5]

How Siphon Brewing Works

The process relies on a two-chamber glass system and a heat source: [1, 6]

  1. Vapour Pressure: Water is heated in the lower chamber (the "bulb"). As it boils, the resulting steam creates pressure that forces the water up through a tube and filter into the upper chamber (the "hopper").
  2. Immersion Extraction: Once the water is in the top chamber, coffee grounds are added and stirred. The coffee steeps in a state of full immersion, similar to a French Press, while the heat source keeps the water temperature stable.
  3. Vacuum Drawdown: When the heat is removed, the air in the lower chamber cools and contracts, creating a vacuum. This suction pulls the brewed coffee back down through the filter, separating it from the grounds. [3, 7, 8, 9, 10, 11]

To achieve the best results, use these standard guidelines:

  • Grind Size: Medium to medium-fine (roughly the texture of table salt).
  • Coffee-to-Water Ratio: Typically 1:15 to 1:16 (e.g., 20g of coffee for 300ml of water).
  • Brewing Temperature: Target water between 92–95°C (198–203°F) for extraction.
  • Steep Time: Approximately 45 to 90 seconds in the upper chamber before removing heat. [1, 3, 5, 8, 9, 12, 13]
