Overview¶
Coffee freshness and storage encompasses the practices and principles that preserve flavour quality in roasted coffee from the point of roasting through to brewing. The primary concerns are managing COâ‚‚ degassing in the first days post-roast, preventing oxidation and volatile compound loss during storage, and matching the rest period to the intended brewing method. Whole bean coffee stored in airtight conditions at room temperature retains acceptable flavour for three to six weeks post-roast; ground coffee stales substantially faster due to dramatically increased surface area.
