Overview

Coffee extraction variables are the controllable parameters that determine how much and which compounds are dissolved from ground coffee into water during brewing. The primary variables are grind size, water temperature, contact time, water-to-coffee ratio, and water chemistry; each affects extraction yield and the balance of flavours in the final cup.
