Brew Ratio and Yield

Summary:: Brew ratio defines how much coffee is used relative to water; yield describes how much ends up in the cup and how much was extracted.

  • Brew ratio:
  • Defined as coffee mass : water mass (or beverage mass).
  • Example guidelines:
    • Espresso: commonly around 1:2 (e.g., 18 g in → 36 g out).
    • Filter: commonly around 1:15–1:17 (e.g., 15 g in → 255 g water).
  • Extraction yield:
  • Approximate target range for many brews: 18–22% of the coffee mass dissolved.
  • Used mainly as a tool, not a strict rule; taste is the final arbiter.
