Overview¶
A breve (also called caffè breve) is an American espresso drink made with steamed half-and-half instead of milk, producing a richer, creamier, and sweeter result than a standard latte. Half-and-half — a blend of equal parts whole milk and cream — has a higher fat content than whole milk, which creates denser, more stable foam and a velvety texture that softens the intensity of the espresso. The breve is not a standard European espresso drink; it originated in and remains primarily associated with American coffee culture.
Composition¶
A standard breve consists of: - Espresso: One or two shots (typically a double, approximately 60 ml) - Steamed half-and-half: Approximately 120–180 ml, textured similarly to latte milk
The drink is typically served in an 200–350 ml cup, sized and structured similarly to a small latte.
Flavour and Texture¶
The substitution of half-and-half for whole milk produces a notably different sensory experience:
- Texture: Denser and more velvety than a latte; the higher fat content creates foam closer in character to lightly whipped cream
- Sweetness: Distinctly sweeter than a latte despite no added sugar, due to the lactose concentration and fat content of half-and-half
- Body: Heavier mouthfeel; the drink coats the palate more than a milk-based latte
- Bitterness: Reduced; the fat content softens and rounds the espresso's harsher notes
Comparison with Related Drinks¶
| Drink | Liquid component | Relative body | Sweetness |
|---|---|---|---|
| Latte | Whole milk | Medium | Mild |
| Breve | Half-and-half | Full / heavy | Pronounced |
| Cappuccino | Whole milk | Medium-light | Mild |
| Flat white | Whole milk (microfoam) | Medium | Mild |
Variations¶
Iced breve: Cold half-and-half over ice with espresso; same creamy profile in a chilled format.
Flavoured breve: Vanilla, caramel, or mocha syrups added to the espresso–half-and-half base; common in American specialty café contexts.
Key Facts¶
- A breve uses steamed half-and-half (equal parts whole milk and cream) instead of milk as the espresso accompaniment
- Higher fat content produces denser foam, greater body, natural sweetness, and a rounded flavour compared to a standard latte
- Standard composition: double espresso + 120–180 ml steamed half-and-half in a 200–350 ml cup
- Originates in and is primarily associated with American coffee culture; not a standard European espresso drink
