Immersion Brewing

Immersion brewing is a coffee method where ground coffee is fully submerged in water for a set period, allowed to steep, and then separated from the grounds by some form of filtration.12

Definition

Immersion brewing (also called steeping or infusion) is any method in which coffee grounds sit in water and extraction happens while water is prevented from exiting the brew until the chosen contact time has elapsed. The water and coffee form a uniform slurry and are only separated at the end, usually by plunging, decanting, or draining through a filter.2341

Core characteristics

  • Full contact between water and grounds for the entire extraction phase.32
  • Extraction controlled primarily by time, brew ratio, grind size, and temperature rather than flow rate.23
  • Often produces a cup with greater body, rounded sweetness, and lower perceived acidity compared with typical percolation brews.53
  • Generally more forgiving and consistent for beginners, as water contacts the grounds evenly and variables change more slowly.65

Typical methods

  • French press: Grounds steep in hot water for several minutes, then a metal mesh plunger separates the brew from the grounds.78
  • Cold brew: Coarse coffee steeps fully immersed in cold water for many hours before filtering, yielding a smooth, low-acid concentrate.52
  • Cupping: Coffee is ground into a cup, water is added, and the grounds steep undisturbed before breaking the crust and tasting.97
  • AeroPress (steeped styles): Coffee and water are mixed and left to sit briefly, then pressed through a filter to separate.72
  • Clever Dripper and similar immersion drippers: Coffee steeps in a closed cone, then is released to drain through a paper filter for added clarity.27

Practical guidelines

  • Use a coarse to medium-coarse grind for most hot immersion methods to avoid over-extraction and excessive fines.47
  • Start with contact times around 3–5 minutes for hot brews and 8–24 hours for cold brew, adjusting to taste.72
  • Stir or gently agitate early in the brew to ensure even saturation and more uniform extraction.27
  • Choose metal or mesh filtration for heavier body, or paper filtration (e.g., Clever) for more clarity with immersion character.72 101112131415
