Overview¶
Paris underwent a specialty coffee transformation from around 2010, as a new generation of independent cafés — including Telescope, Coutume, Dose, and Ten Belles — moved away from the traditional French café's dark-roasted Robusta espresso toward single-origin, light-roasted specialty coffee. This shift represented a significant departure from a deeply entrenched café tradition and reflected the influence of Nordic and Australasian specialty movements on a city with a historically resistant coffee culture.
